Legend has it that some tea leaves accidentally fell into a Chinese Emperors pot of boiling water. Allow boiling water to cool slightly then pour over a bag of Temple of Heaven and steep 2-4 minutes to capture the full taste. Over steeping brings out bitterness from tannin, a natural part of tea.
